What Does Build Date mean?

The Build Date is what it says, that's the date the factory built the vehicle.
This is not to be confused with the registration date.
Parts are always identified to the build date not the registration date.
Ford may have made changes to parts on vehicles from one build date to another.

Why do I need a adaptor for my Parrot?

The Adaptors are used to connect up to the original wiring in the car without the need to cut into wiring and cause potential damage. It also enables easy removal and refitting into another car. Adaptors are available for most vehicle lines. I would not recommend fitting without the relevant adaptor.
